Avocado Chicken Salad Sandwich

Ingredients
1 large ripe avocado
2 cups Cooked Chicken, diced
1 apple, cored and diced
1/4 cup celery, thinly sliced
1 roma tomato, seeded and diced
1/4 cup red onion, diced
1/2 lime, juiced
2 cups spring mix
1/2 tsp salt
pinch of ground black pepper
8 slices of whole wheat bread
Cut the avocado in half and remove the pit.
Place the avocado in a mixing bowl and mash with the back of a fork until creamy in texture.
Add tomato, onion, apple, celery, salt, pepper, and lime juice in the bowl and mix to incorporate all the ingredients together.
Place the mixture and a handful of spring mix between two slices of bread and serve.
