Chicken Tenderloin Thai Green Curry

Ingredients
1 tablespoon vegetable oil
2 tablespoons green curry paste
1 & 1/2 pounds chicken tenderloins
3/4 cup coconut milk
2 red bell peppers, thinly sliced
1/4 cup water
5 kaffir lime leaves
1 tablespoon fish sauce
1 tablespoon brown sugar
salt to taste
small handful of Thai basil leaves
Additional Ingredients
1 cup bean sprouts
Steamed rice

Directions
1. Heat a pot over medium heat for about 2 minutes.
2. Add oil and cook the green curry paste until fragrant – approx. 3-4 minutes.
3. Add chicken pieces and coconut milk. Cover with lid and bring to a gentle boil.
4. Add the remaining ingredients and continue simmering with lid closed for about 5
minutes.
5. Remove from heat, garnish with bean sprouts, and serve with steamed rice.
